Broccoli and Kale Soup

Broccoli and Kale Soup

Cooking lunch for a parent can be a touch stressful, especially one who spends her time cooking for a living. So when my mum came round on Sunday it was all hands to the pumps. The girlfriend put this soup together from "anything green" she found in the vegetable box, hence the rather shocking colour. The broccoli and kale were simmered in chicken stock with a little potato to thicken it when it was pureed. She put gorgonzola and pecorino in once the vegetables were cooked to add a cheese spike to it. It was served with grated nutmeg and toasted pinenuts. A real autumnal experience this one, the strong flavours of the veg rounded out by the cheese and then warmed by the nutmeg. I was busy chopping up rabbits...but I'll leave the girlfriend with the limelight on this one. My mum enjoyed it.
