This is the resurrected remains of last nights dinner, in breakfast form. The mixed hake and potato mash were made into cakes, floured and then fried with some olive oil and topped off with a poached egg.
I wish I got to spend time on breakfast everyday, it is my favourite meal, yet somehow getting up and rushing about in the morning to get to work means I either miss it completely or I bolt it down and feel a bit queasy on the train. Not the best way to start the day, going green and threatening to throw up into someone's briefcase on the 9.22 to Victoria Station.

i hear you on the breakfast front. my days are so much nicer when breakfast is enjoyed the way it should.
Breakfast is also my favorite meal, and what a wonderful one this is! I always enjoy a good breakfast...and when it cleverly uses up leftovers all the better :)
